  • 1 kg Beef chuck roast, cut into 1.5-inch cubes
  • 3 tbsp All-purpose flour
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 3 tbsp Olive oil
  • 2 Large yellow onions, chopped
  • 4 Garlic cloves, minced
  • 3 medium Carrots, peeled and sliced
  • 2 medium Parsnips, peeled and sliced
  • 2 Celery stalks, sliced
  • 1 liter Beef broth
  • 200 ml Dry red wine (optional)
  • 2 tbsp Tomato paste
  • 2 Bay leaves
  • 1 tsp Dried thyme
  • 2 tbsp Fresh parsley, chopped (for garnish)
