  • 2 cups All-purpose flour
  • 0.75 cup Warm water(approximately, for dough)
  • 0.5 tsp Salt(for dough)
  • 2 tbsp Olive oil(for dough)
  • 3 tbsp Vegetable oil or Ghee(for stew)
  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 800 g Tomatoes(crushed or diced)
  • 2 tbsp Tomato paste
  • 2 medium Carrots(chopped)
  • 2 medium Zucchini(chopped)
  • 1 medium Eggplant(chopped)
  • 2 medium Potatoes(chopped)
  • 1 can (400g) Chickpeas(rinsed and drained)
  • 4 cups Vegetable broth or water
  • 1 tbsp Baharat spice blend
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Turmeric
  • to taste Salt
  • to taste Black pepper
  • 0.25 cup Fresh cilantro or parsley(chopped, for garnish)
