  • 300 g Rhubarb(trimmed and cut into 1-inch pieces)
  • 2 medium Onions(chopped)
  • 3 medium Carrots(peeled and sliced)
  • 500 g Potatoes(peeled and cubed)
  • 4 cloves Garlic(minced)
  • 2 tbsp Butter
  • 1 liter Lamb or beef broth
  • 2 tbsp Brown sugar(or to taste)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground, or to taste)
  • 1 tbsp Fresh thyme(chopped, for garnish (optional))

  • For a richer flavor, you can sear the lamb bones along with the meat.
  • If the stew is too thin, you can thicken it with a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) in the last 10 minutes of cooking.
