🧂 Ingrédients

  • 1 kg Cow foot
  • 150 ml Palm oil(Use good quality, bright red palm oil for color and flavor.)
  • 1 teaspoon Potash (akanwu/kaun)(Dissolve in about 1/4 cup of warm water to create a potash solution. Strain to remove any grit.)
  • 1 small bunch Utazi leaves
  • 3-4 Scotch bonnet peppers(Adjust to your spice preference.)
  • 2 Ehuru seeds (Calabash nutmeg)
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 1-2 Stock cubes(Optional, for added flavor)
  • to taste Salt
  • as needed Water

💡 Conseils de pro

  • Ensure the cow foot is cooked until exceptionally tender; it should be soft and yielding.
  • The emulsification of the palm oil with the potash solution is critical for the authentic texture of Nkwobi. Whisk until it thickens and becomes creamy.
  • Taste and adjust seasoning carefully, especially the salt and scotch bonnet, as the potash can affect the perception of saltiness.
  • Utazi leaves provide a unique bitter counterpoint to the richness of the dish. If unavailable, a small amount of finely chopped bitter leaf (well-rinsed) can be a substitute, though the flavor profile will differ.
