- 1
Preheat oven to 190ยฐC (375ยฐF).
- 2
In a large bowl, combine ground lamb, ground beef, uncooked Arborio rice, chopped onion, minced garlic, chopped parsley, chopped mint, egg, salt, and pepper. Mix thoroughly until well combined.
- 3
Form the mixture into small meatballs, about 3-4 cm in diameter.
- 4
Heat olive oil in an oven-safe skillet or Dutch oven over medium-high heat. Brown the meatballs on all sides. This step is optional but adds flavor.
- 5
Pour the crushed tomatoes and water or broth into the skillet with the meatballs. Stir gently to combine.
- 6
Cover the skillet and transfer it to the preheated oven. Bake for 40-45 minutes, or until the meatballs are cooked through and the rice is tender.
- 7
Let rest for a few minutes before serving. Serve hot, garnished with extra fresh parsley if desired.

- โEnsure the rice is uncooked when mixing; it will cook and absorb liquid in the sauce.
- โFor a richer sauce, you can add a bay leaf or a pinch of dried oregano to the tomato mixture.
- โIf you don't have lamb and beef, you can use all of one or the other, or even ground pork.
