- 1 large Onion(chopped)
- 3 cloves Garlic(minced)
- 200 g Tomatoes(diced or pureed)
- 2 tbsp Vegetable oil
- 1.2 liter Vegetable broth
- 1 tsp Cumin
- 1 tsp Coriander
- 0.5 tsp Turmeric
- 1 tsp Ginger(grated)
- to taste Salt
- to taste Black pepper
- for garnish Fresh cilantro or parsley(chopped)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Sautรฉ chopped onion until softened, about 5-7 minutes.

Add minced garlic, grated ginger, cumin, coriander, and turmeric. Cook for 1 minute until fragrant.

Stir in the diced or pureed tomatoes and cook for 3-5 minutes, allowing the flavors to meld.
