Latvian Cold Beet Soup

- 500 g Cooked beets(peeled and grated)
- 1 liter Kefir(or buttermilk)
- 200 ml Cold water
- 2 medium Cucumbers(finely diced)
- 5 Radishes(thinly sliced)
- 3 Spring onions(finely chopped)
- 2 tbsp Fresh dill(chopped)
- 1 tbsp White vinegar
- to taste Salt
- to taste Black pepper(freshly ground)
- 4 Hard-boiled eggs(chopped, for garnish (optional))

Ensure your beetroot is fully cooked and cooled. Peel and grate it finely.
