- 2 large Onions(chopped)
- 4 cloves Garlic(minced)
- 4 large Tomatoes(chopped)
- 2 tbsp Tomato Paste
- 4 Ripe Plantains(peeled and cut into 1-inch chunks)
- 4 cups Water or Beef Broth
- to taste Salt
- to taste Black Pepper
- 1 Chili Pepper (optional)(finely chopped)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the meat on all sides, working in batches if necessary. Remove the meat and set aside.

Add the chopped onions to the pot and cook until softened and translucent, about 5-7 minutes.
