Zambian Pumpkin and Peanut Stew

- 1 kg Pumpkin(peeled, deseeded, and cut into 1-inch cubes)
- 200 g Peanut butter(unsweetened, smooth)
- 1 large Onion(finely chopped)
- 2 medium Tomatoes(chopped)
- 500 ml Water
- 2 tbsp Vegetable oil
- 1 tsp Salt(or to taste)
- 0.5 tsp Chili powder(optional, for heat)

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.

Add the chopped tomatoes to the pot and cook for another 5 minutes, stirring occasionally, until they begin to break down.

Stir in the peanut butter and cook for 1-2 minutes, until fragrant. Be careful not to burn it.
