  • 800 g Young green jackfruit (in brine or water)(drained, rinsed, and cut into bite-sized pieces)
  • 2 tbsp Coconut oil
  • 1 tsp Mustard seeds
  • 10-12 medium Small red onions(thinly sliced)
  • 3 cloves Garlic cloves(finely crushed)
  • 1 inch piece Ginger(finely crushed)
  • 3-4 sprigs Curry leaves
  • 1 tsp Fenugreek seeds
  • 1 large Pandan leaf(knotted)
  • 4-6 pieces Goraka (Malabar Tamarind)(soaked in warm water, paste made)
  • 0.5 tsp Turmeric powder
  • 1.5 tbsp Chili powder(adjust to taste)
  • 1.5 tbsp Roasted Sri Lankan curry powder
  • 1 tsp Black peppercorns(coarsely ground)
  • 2 cups Thick coconut milk
  • 1 cup Thin coconut milk
  • to taste Salt
