- 2 medium Leeks(white and light green parts only, thinly sliced)
- 100 g Goat cheese(crumbled (preferably local Andorran goat cheese))
- 2 tablespoons Butter
- 1 tablespoon Olive oil

- 1 tablespoon Fresh chives(chopped, for garnish (optional))

In a medium bowl, whisk the eggs with salt and pepper until well combined. Stir in the crumbled goat cheese and chopped chives (if using).

Clean the leeks thoroughly to remove any grit. Thinly slice the white and light green parts of the leeks.
