Samak Mashwi bil Tahini
Grilled whole fish marinated in a flavorful blend of spices and herbs, then drizzled with a creamy tahini sauce. A popular coastal dish.

- 2 x 500g Whole sea bream or similar white fish(cleaned and scaled)
- 0.25 cup Olive oil
- 3 tbsp Lemon juice
- 4 cloves Garlic(minced)
- 1.5 tsp Cumin
- 1 tsp Coriander
- 0.5 tsp Paprika
- 1 tsp Salt
- 0.5 tsp Black pepper
- 0.25 cup Fresh parsley(chopped)
- 0.5 cup Tahini
- 0.25 cup Water(or as needed)
- 2 tbsp Lemon juice (for sauce)
- 1 clove Garlic (for sauce)(minced)

Preheat your grill or oven to medium-high heat.

Make shallow scores on both sides of the fish. This helps the marinade penetrate and ensures even cooking.

In a small bowl, whisk together olive oil, 3 tbsp lemon juice, minced garlic, cumin, coriander, paprika, salt, pepper, and chopped parsley.

Rub the marinade all over the fish, making sure to get some inside the cavity and into the scores.
