In a bowl, whisk together yogurt, lemon juice, minced garlic, olive oil, paprika, sumac, cumin, coriander, salt, and pepper to create the marinade.
ð¡ ããã®ã³ã: Ensure all spices are well combined. - 2
Add the chicken cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
ð¡ ããã®ã³ã: Marinating longer will result in more flavor. - 3
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
â±ïž 30 minutes - 4
Thread the marinated chicken onto the skewers. If using, alternate with chunks of bell peppers and onions.
ð¡ ããã®ã³ã: Don't overcrowd the skewers to ensure even cooking. - 5
Preheat your grill or grill pan to medium-high heat. Lightly oil the grates.
ð¡ ããã®ã³ã: A hot grill ensures a good sear. - 6
Grill the skewers for 6-8 minutes per side, or until the chicken is cooked through and has nice char marks.
â±ïž 15 minutesð¡ ããã®ã³ã: Internal temperature should reach 165°F (74°C). - 7
Serve hot, often with pita bread, hummus, tahini sauce, and a fresh salad.

- âChicken thighs tend to stay more moist than breasts, but both work well.
- âFor oven-baking, place skewers on a baking sheet lined with foil and bake at 400°F (200°C) for 20-25 minutes, turning halfway.
- âA squeeze of fresh lemon juice over the cooked skewers adds brightness.
