Lawa de Choclo is a creamy and hearty corn soup, a staple in the Cochabamba region of Bolivia. Made with fresh corn kernels, potatoes, and often a savory broth (sometimes with lamb or beef), it's a comforting dish perfect for cooler weather. Its thick consistency gives it a substantial feel, making it a satisfying soup.

- 8 cups Chicken or Beef Broth
- 4 medium Potatoes(peeled and cut into cubes)
- 1 medium Onion(finely chopped)

- 1 medium Tomato(peeled and finely chopped)
- 0.5 cup Green beans(fresh or frozen, trimmed and chopped)
- 2 tbsp Red chili paste (Ajรญ Colorado)(or to taste)
- 3 tbsp Olive oil
- 1 tbsp Salt(or to taste)
- 0.25 tsp Oregano(dried)
- 0.25 tsp Cumin(ground)
- 1 tbsp Parsley(chopped, for garnish)
- 0.25 cup Quesillo (fresh cheese)(crumbled, for garnish (optional))

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sautรฉ until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the chopped tomato, green beans, ajรญ colorado paste, oregano, and cumin. Cook for 2-3 minutes, stirring constantly.

In a blender, combine about 1 cup of the corn kernels with 1 cup of cold water. Blend until a coarse paste forms. (Alternatively, you can grind it in a mortar and pestle).

Add the remaining corn kernels, the corn paste, and the broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
