Zambian Okra and Peanut Stew
Delele ne Mbalala
A flavorful and slightly tangy stew made with okra (delele) and a rich peanut sauce (mbalala). This dish is a staple relish often served with nshima.

- 500 g Okra(fresh or frozen, trimmed and sliced)
- 0.5 cup Peanut butter(unsweetened, smooth)
- 2 medium Tomatoes(chopped)
- 1 large Onion(chopped)
- 3 cups Water
- 0.5 tsp Baking soda
- to taste Salt
- 1 small Chili pepper(optional, finely chopped)

In a pot, combine the sliced okra, chopped tomatoes, chopped onion, and water. Bring to a boil.

Reduce heat to medium-low, cover, and simmer for about 20 minutes, or until the okra is tender.

In a separate bowl, whisk the peanut butter with about 1 cup of the hot liquid from the pot until smooth. This prevents lumps.

Pour the peanut butter mixture back into the pot. Stir well to combine.

Add the baking soda and stir. The stew will thicken slightly and may become a bit frothy.

Add the optional chili pepper if using. Season with salt to taste. Simmer for another 15-20 minutes, stirring occasionally, until the stew has thickened to your desired consistency.
