  • 1 large Yellow onion(finely chopped)
  • 4 cloves Garlic(minced)
  • 1 can (15 oz) Chickpeas(drained and rinsed)
  • 2 medium Carrots(peeled and cut into 1-inch pieces)
  • 1 medium Zucchini(cut into 1-inch pieces)
  • 1 cup Butternut squash(peeled and cut into 1-inch cubes)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground allspice
  • 1 teaspoon Dill seeds(optional, but traditional)
  • to taste Salt
  • to taste Black pepper
  • 0.25 cup Fresh parsley(chopped, for garnish)
