  • 10 cups Water
  • 1 large Yellow onion(chopped)
  • 1 large Green bell pepper(chopped)
  • 4 cloves Garlic cloves(minced)
  • 3 medium Carrots(peeled and sliced)
  • 2 Celery stalks(sliced)
  • 2 medium Potatoes(peeled and cubed)
  • 2 ears Corn on the cob(cut into 2-inch pieces (optional))
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 Bay leaf
  • to taste Salt
  • to taste Black pepper
  • 2 tbsp Olive oil
  • 0.25 cup Fresh cilantro or parsley(chopped, for garnish)

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.
