  • 2 lbs Beef chuck(cut into 1.5-inch cubes)
  • 2 tbsp Olive oil
  • 1 large Onion(chopped)
  • 1 medium Green bell pepper(chopped)
  • 4 cloves Garlic(minced)
  • 2 tbsp Tomato paste
  • 14.5 oz Diced tomatoes(canned)
  • 2 cups Beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dried oregano
  • 1 whole Bay leaf
  • to taste Salt
  • to taste Black pepper
  • 2 medium Potatoes(peeled and cubed)
  • 2 medium Carrots(peeled and sliced)
  • 1/4 cup Cilantro(chopped, for garnish)

    Pat the beef dry with paper towels and season generously with salt and pepper.

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches on all sides, then remove and set aside.

    Add the chopped onion and bell pepper to the pot and cook until softened, about 5-7 minutes.

    Stir in the minced garlic and tomato paste, and cook for 1 minute until fragrant.

    Add the diced tomatoes, beef broth, Worcestershire sauce, oregano, and bay leaf. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
