Papas Chorreadas

- 8 Medium potatoes (like Yukon Gold or red potatoes)
- 200g Queso fresco
- 1/2 cup Heavy cream(or half-and-half for a lighter sauce)
- 2 Ripe tomatoes
- 4 Scallions (green onions)
- 1 tablespoon Vegetable oil(for sautéing)

Place the prepared potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil over high heat, then reduce heat to medium and simmer until the potatoes are fork-tender, about 20-25 minutes. Drain the potatoes and set aside.
