  • 2 medium Chayote squash (christophine)(peeled, seeded, and grated)
  • 2 medium Carrots(peeled and grated)
  • 1 medium Onion(finely chopped)
  • 3 cloves Garlic(minced)
  • 1 tsp Ginger(grated)
  • 1 tsp Turmeric powder
  • 0.5 tsp Cumin powder
  • 0.5 tsp Coriander powder
  • 150 g All-purpose flour
  • 3 large Eggs
  • 100 ml Milk
  • 3 tbsp Vegetable oil(plus more for greasing)
  • 2 tbsp Fresh coriander(chopped)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground)

    Preheat oven to 180°C (350°F). Grease and flour a loaf pan or a round cake pan.

    Heat 3 tbsp vegetable oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 5 minutes.

    Add minced garlic and grated ginger to the skillet. Cook for another minute until fragrant.

    Stir in the grated chayote squash and carrots. Cook for about 10-15 minutes, stirring occasionally, until the vegetables are tender and most of the moisture has evaporated.

    Add turmeric, cumin, and coriander powders, salt, and pepper. Mix well and cook for another 2 minutes.

    Remove the skillet from heat. Let the vegetable mixture cool slightly.

    In a separate bowl, whisk together the flour, eggs, and milk until smooth.

    Add the cooled vegetable mixture and chopped fresh coriander to the flour-egg mixture. Stir to combine thoroughly.
