- 30 g Lard
- 60 ml Marsala wine
- 500 g Fresh ricotta
- 150 g Powdered sugar
- for filling Candied fruit and chocolate chips

Make dough with flour, lard, Marsala. Rest 2 hours.

Roll thin. Wrap around cannoli tubes.

Fry until golden and bubbly.

Drain ricotta. Mix with sugar. Fill shells just before serving.
