Malian Red Rice with Fish

- 400 g Tomatoes(crushed or pureed)
- 2 tbsp Tomato paste
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 1 large Bell pepper(diced)
- 2 medium Carrots(diced)
- 4 tbsp Vegetable oil
- 6 cups Water or fish broth
- 1 optional Bouillon cube

Rinse the rice thoroughly under cold water until the water runs clear. Set aside.
