Pollo en Cebollado

- 2 lbs Chicken pieces(bone-in, skin-on thighs and drumsticks recommended)
- 3 large Onions(thinly sliced)
- 3 medium Tomatoes(chopped)
- 4 Garlic cloves(minced)
- 1 Bell pepper(any color, chopped)
- 2 tbsp Vegetable oil
- 1 cup Chicken broth
- 2 tbsp Tomato paste
- 1 tsp Cumin
- 1 tsp Oregano
- to taste Salt

- 1/4 cup Fresh cilantro(chopped, for garnish)

Season chicken pieces generously with salt and pepper.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until golden. Remove chicken and set aside.
