  • 1 kg Octopus(cleaned, tentacles separated)
  • 2 large Onions(chopped)
  • 6 cloves Garlic(minced)
  • 400 g Tomatoes(diced)
  • 1 medium Red bell pepper(chopped)
  • 150 ml White wine(dry)
  • 2 Bay leaf
  • 1 tsp Paprika
  • 0.5 tsp Cumin
  • 3 tbsp Olive oil
  • to taste Salt
  • to taste Black pepper
  • a handful Cilantro(chopped, for garnish)

    To tenderize the octopus, you can either freeze it for at least 24 hours or boil it in lightly salted water for about 30-45 minutes until slightly tender. Drain and cut into bite-sized pieces.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and sauté until softened, about 7-10 minutes.

    Add the minced garlic and cook for another minute until fragrant.

    Stir in the diced tomatoes and chopped red bell pepper. Cook for about 5-7 minutes, until the vegetables begin to soften.
