🧂 Ingredients

  • 500 g All-purpose flour
  • 250 ml Milk(lukewarm)
  • 100 g Granulated sugar
  • 7 g Yeast(dry active yeast)
  • 2 large Egg yolks
  • 50 g Butter(melted)
  • 1 tsp Salt
  • 1 tsp Vanilla extract
  • For coating:(100g granulated sugar, 100g ground walnuts, 50g melted butter)

👨‍🍳 Instructions

  1. 1

In a small bowl, combine lukewarm milk, 1 tsp of sugar, and yeast. Let it sit for 5-10 minutes until foamy.

  2. 2

In a large bowl, whisk together flour, remaining sugar, salt, and vanilla extract. Make a well in the center.

  3. 3

Pour the yeast mixture, egg yolks, and melted butter into the well. Mix until a shaggy dough forms.

  4. 4

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.

  5. 5

Punch down the dough and divide it into 8 equal portions. Roll each portion into a long rope, about 1 cm thick.

  6. 6

Wrap each rope around a trdelník mold (or a greased wooden dowel/metal pipe), spiraling it from bottom to top, overlapping slightly. Ensure the dough is evenly distributed.

  7. 7

In a shallow dish, mix the granulated sugar and ground walnuts for the coating. Brush the dough-wrapped molds with melted butter.

  8. 8

Roll the buttered dough in the sugar-walnut mixture, pressing gently to coat evenly. Place the molds on a baking sheet.

  9. 9

Bake in a preheated oven at 180°C (350°F) for 12-15 minutes, or until golden brown. Alternatively, grill over medium heat, turning frequently, until golden brown and cooked through.

  10. 10

Carefully remove the trdelník from the molds while still warm. Serve immediately.

💡 Pro Tips

  • Using a trdelník mold or a suitable substitute is crucial for the characteristic shape.
  • Ensure the dough is well-kneaded for a light and airy texture.
  • Don't overbake, as the pastry can become dry.
  • The coating can be customized with cinnamon or other spices.

🔄 Variations

  • Fill the baked trdelník with ice cream or whipped cream.
  • Use a mix of nuts like almonds or pecans for the coating.
  • Add a touch of cinnamon to the dough for added flavor.
