Classic British Jam Tarts

- 300 g Shortcrust pastry(Store-bought or homemade. Ensure it's chilled.)
- 200 g Assorted jams(Raspberry, strawberry, or blackcurrant are traditional choices. Use a jam with good set.)
- 1 tbsp Milk or egg wash (optional)(For brushing the pastry edges for a golden sheen.)

Preheat your oven to 200°C (400°F, Gas Mark 6). Lightly grease a 12-hole mini muffin tin or individual tartlet tins.

On a lightly floured surface, roll out the chilled shortcrust pastry to about 3mm (1/8 inch) thickness. Using a round cutter (approximately 7-8 cm or 3 inches in diameter), cut out 12 circles. Re-roll scraps if necessary.

Gently press each pastry circle into the prepared tartlet tins, ensuring the pastry lines the base and sides evenly. Prick the base of each tart case a couple of times with a fork to prevent puffing.

Spoon about 1-2 teaspoons of your chosen jam into each pastry case. Be careful not to overfill, as the jam will bubble and spread during baking.

If using, lightly brush the exposed edges of the pastry with milk or beaten egg for a golden finish. Bake in the preheated oven for 12-15 minutes, or until the pastry is crisp and golden brown, and the jam is bubbling.

Carefully remove the tarts from the tins and transfer them to a wire rack to cool completely. The jam will be very hot when fresh from the oven.
