Yemeni Chicken Mandi Rice

- 2 cups Long-grain rice(rinsed and soaked for 20 minutes)
- 3 cups Chicken broth
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 1 tsp Ginger(grated)
- 2 tbsp Vegetable oil
- 1.5 tbsp Mandi spice mix(cumin, coriander, black pepper, cardamom, cloves, cinnamon, turmeric)

- 1 whole Dried lime (Loomi)(pierced with a fork)
- 1/4 cup Raisins(optional)
- 1/4 cup Toasted slivered almonds(for garnish)
- 2 tbsp Fresh parsley(chopped, for garnish)

In a pot, heat the vegetable oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
