Yemeni Shakshuka with Foul
A hearty and flavorful dish combining the classic shakshuka (eggs poached in a spiced tomato and pepper sauce) with the addition of mashed fava beans (foul), creating a richer and more substantial meal.

- 2 cups Fava beans (foul), cooked and mashed
- 3 tbsp Olive oil
- 1 medium Onion, finely chopped
- 3 cloves Garlic, minced
- 1 can (28 oz) Tomatoes, crushed or diced
- 1 medium Bell pepper (any color), chopped
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Paprika
- 1/4 tsp Cayenne pepper(or to taste)

- 6-8 large Eggs
- 1/4 cup Fresh cilantro or parsley, chopped(for garnish)
- as needed Yemeni bread (e.g., Khobz), for serving

Heat olive oil in a large, oven-safe skillet or pan over medium heat. Add chopped onion and bell pepper and sauté until softened, about 5-7 minutes.
