  • 500 g Chicken thighs or breast(cut into bite-sized pieces)
  • 250 g Mushrooms(sliced)
  • 1 medium Onion(chopped)
  • 3 cloves Garlic(minced)
  • 1 medium Carrot(chopped)
  • 3 tbsp Cooking oil
  • 1 cup Chicken stock(approximately 240ml)
  • 0.5 cup Cream (heavy or whipping)(approximately 120ml)
  • 2 tbsp Flour
  • 1.5 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground, or to taste)
  • 1 tsp Dried thyme

    Heat cooking oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and season with salt and pepper. Brown the chicken on all sides, then remove from the pot and set aside.

    Add the chopped onion, minced garlic, and chopped carrot to the same pot. Sauté until the onions are softened and translucent, about 5-7 minutes.
