Trinidad Chicken Sāi
A flavorful and aromatic chicken dish, Chicken Sāi is a popular Indo-Trinidadian curry that is rich in spices and typically served with rice or roti.

- 1.5 kg Chicken thighs(bone-in, skin-on, cut into serving pieces)
- 2 large Onions(finely chopped)
- 6 cloves Garlic(minced)
- 2 inch piece Ginger(grated)
- 1 medium Scotch bonnet pepper(finely chopped, seeds removed for less heat)
- 3 tbsp Curry powder
- 1 tsp Garam masala
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 400 g Tomatoes(canned, diced)
- 400 ml Coconut milk(full-fat)
- 3 tbsp Vegetable oil
- to taste Salt
- 1/2 cup Fresh cilantro(chopped, for garnish)
- 1/2 cup Water(or as needed)

In a large bowl, combine chicken pieces with half of the chopped onions, minced garlic, grated ginger, chopped scotch bonnet pepper, curry powder, garam masala, turmeric, cumin, and coriander. Season with salt. Marinate for at least 30 minutes, or ideally longer in the refrigerator.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the marinated chicken and sear on all sides until lightly browned. Remove chicken from the pot and set aside.

Add the remaining chopped onions to the pot and sauté until softened and translucent, about 5-7 minutes.

Stir in the diced tomatoes and cook for another 5 minutes, scraping up any browned bits from the bottom of the pot.

Return the seared chicken to the pot. Pour in the coconut milk and water. Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until chicken is tender and cooked through.
