Noah's Pudding
Aşure, also known as Noah's Pudding, is a traditional Turkish dessert made from a delightful mix of grains, legumes, dried fruits, and nuts. It symbolizes abundance and is often shared with neighbors and loved ones, carrying a rich cultural and historical significance.

- 200 g Wheat berries(Also known as hulled wheat or farro. Rinse well before soaking.)
- 100 g Dried white beans(Such as cannellini or navy beans. Rinse well before soaking.)
- 100 g Dried chickpeas(Rinse well before soaking.)
- 100 g Dried apricots(Chopped)
- 100 g Dried figs(Chopped)
- 50 g Raisins(Golden or dark)
- 300 g Sugar(Adjust to taste. Can use a mix of white and brown sugar.)
- 2 tbsp Rose water(Optional, but adds a classic floral aroma. Use food-grade rose water.)
- 2.5 L Water(Approximately, for cooking)
- For Garnish (optional)(Toasted walnuts, blanched almonds, pomegranate seeds, ground cinnamon)

Rinse the wheat berries, white beans, and chickpeas thoroughly under cold water. Place them in separate large bowls and cover generously with cold water. Let them soak overnight (at least 12 hours).

Drain and rinse the soaked wheat berries, beans, and chickpeas. Place the wheat berries in a large pot and cover with fresh water. Bring to a boil, then reduce heat and simmer for about 1 hour, or until they begin to soften. Drain and set aside.

In the same pot (or a clean one), add the drained white beans and chickpeas. Cover with fresh water and bring to a boil. Reduce heat and simmer until both beans and chickpeas are tender but not mushy. This can take 1.5 to 2 hours. Drain and set aside.

While the legumes are cooking, prepare the dried fruits. Place the chopped apricots, figs, and raisins in a bowl and cover with hot water. Let them soak for about 30 minutes to rehydrate and soften. Drain the fruits.

In a very large, heavy-bottomed pot, combine the cooked wheat berries, cooked white beans, cooked chickpeas, and the rehydrated dried fruits. Add approximately 2 liters of fresh water. Bring the mixture to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover partially, and simmer gently for at least 1 hour, stirring occasionally to prevent sticking. The mixture should thicken and the flavors should meld. Add more water if it becomes too thick.

Stir in the sugar gradually, ensuring it dissolves completely. Continue to simmer for another 15-20 minutes, stirring frequently, until the sugar is fully incorporated and the aşure reaches a pudding-like consistency. Taste and adjust sweetness if needed.

Remove the pot from the heat. Stir in the rose water, if using. Let the aşure cool slightly for about 10-15 minutes.

Ladle the aşure into individual serving bowls. Allow it to cool further at room temperature, then chill in the refrigerator for at least 2-3 hours, or until set. The pudding will thicken considerably as it cools.

Before serving, garnish each bowl with toasted walnuts, blanched almonds, pomegranate seeds, and a sprinkle of cinnamon, if desired. Serve chilled.
