- 500 g Beef tenderloin or sirloin(Cut into 1-inch cubes. Ensure beef is well-trimmed of excess fat.)
- 2 tbsp Soy sauce(Use a good quality, low-sodium soy sauce if preferred.)
- 1 tbsp Oyster sauce(Adds depth and a slightly sweet, savory flavor.)
- 4 cloves Garlic(Minced finely.)
- 1 tsp Black pepper(Freshly ground is best.)
- 2 tbsp Vegetable oil or other high smoke point oil(For searing the beef.)
- 1 medium Red onion(Cut into wedges or thick slices.)
- 1 bunch Watercress(For serving. Washed and trimmed.)

Prepare the marinade: In a medium bowl, combine the cubed beef, soy sauce, oyster sauce, minced garlic, and 1 teaspoon of black pepper. Toss well to ensure each piece of beef is evenly coated. If refrigerating, bring the beef back to room temperature for about 30 minutes before cooking.

The inside should still be pink. Remove the seared beef to a clean bowl.
