  • 1 medium Sweet potato(peeled and cut into 2-inch pieces)
  • 1 medium Onion(chopped)
  • 1 medium Bell pepper(chopped)
  • 3 cloves Garlic(minced)
  • 1 small Scotch bonnet pepper(finely chopped, seeds removed for less heat (optional))
  • 1/2 cup Cilantro(chopped, for garnish)
