🧂 Zutaten

  • 16 Small zucchini (about 4-5 inches long)(Look for zucchini that are firm and have smooth, unblemished skin. They should be similar in size for even cooking.)
  • 300 g Ground lamb(You can substitute with ground beef or a mixture of lamb and beef if preferred.)
  • 1 cup Short-grain rice(Rinse the rice thoroughly under cold water until the water runs clear. This removes excess starch and prevents the filling from becoming gummy. Do not soak.)
  • 2 Fresh tomatoes(Medium-sized, ripe tomatoes. These will be used for the cooking broth. You can also use canned crushed tomatoes (about 14 oz / 400g) for the broth.)
  • 2 tbsp Dried mint(If using fresh mint, use about 4 tbsp, finely chopped.)
  • 1 tsp Ground cinnamon
  • 0.5 tsp Allspice(Adds a warm, complex flavor. Optional, but recommended.)
  • 1.5 tsp Salt(Adjust to taste, divided between filling and broth.)
  • 0.5 tsp Black pepper(Freshly ground is best, divided between filling and broth.)
  • 2 tbsp Olive oil(For sautéing the filling mixture.)
  • 4 cups Water or vegetable broth(For simmering the stuffed zucchini.)
  • 4 cloves Garlic cloves(Minced, for the broth. Optional.)

  • Core carefully to avoid puncturing the zucchini skin, which will cause the filling to leak out during cooking.
