  • 3 tbsp Coconut oil
  • 2 large Onions(thinly sliced)
  • 6 cloves Garlic cloves(minced)
  • 1 inch piece Ginger(grated)
  • 2-3 Green chilies(slit lengthwise (adjust to taste))
  • 10-15 Curry leaves
  • 2 tbsp Roasted curry powder
  • 1 tsp Chili powder((adjust to taste))
  • 1/2 tsp Turmeric powder
  • 1 Cinnamon stick
  • 3 Cardamom pods
  • 3 Cloves
  • 1/4 tsp Fenugreek seeds
  • 1 tbsp Tamarind paste
  • 400 ml Thick coconut milk
  • 200 ml Water(or as needed)
