  • 1 large Cucumber(peeled and chopped)
  • 1 medium Green bell pepper(chopped)
  • 1 medium Red bell pepper(chopped (optional, for color))
  • 0.5 medium Yellow or white onion(thinly sliced or finely chopped)
  • 0.25 cup Fresh parsley(chopped)
  • 1 cup Bulgarian white cheese (Sirene)(finely grated, or Feta cheese)
  • 3 tbsp Sunflower oil(or extra virgin olive oil)
  • 2 tbsp Red wine vinegar
  • 1 tsp Salt(to taste)
  • 0.25 tsp Black pepper(freshly ground, to taste)
