  • 1 cup Arborio rice
  • 1 medium Onion(finely chopped)
  • 3 cloves Garlic(minced)
  • 1/2 cup Fresh parsley(chopped)
  • 1/4 cup Fresh mint(chopped)
  • 2 tbsp Tomato paste
  • 400 g Canned crushed tomatoes
  • 1/4 cup Olive oil(plus more for drizzling)
  • 1/2 cup White wine
  • 2 tbsp Lemon juice
  • to taste Salt
  • to taste Black pepper
  • 200 g Optional: Ground lamb or beef
