Cypriot Octopus Stew
Oxtapodi Stifado
A rich and deeply flavored octopus stew, slow-cooked with onions, red wine, and aromatic spices. This traditional Cypriot dish, known as Oxtapodi Stifado, is perfect for a hearty meal, especially during fasting periods.

- 1.5 kg Octopus, cleaned and cut into pieces
- 4 tbsp Olive oil
- 2 tbsp Vegetable oil
- 3 Large onions, chopped
- 4 Garlic cloves, minced
- 2 medium Grated tomatoes
- 35 g Tomato paste
- 1 cup Dry red wine
- 3 tbsp White malt vinegar
- 1 Cinnamon stick
- 6 Cloves
- 1 large Bay leaf
- 1 tsp Sugar
- to taste Salt and freshly ground black pepper
- 1 cup Water or reserved octopus cooking liquid

Boil the octopus in water for about 30 minutes until tender. Drain, reserving about 1 cup of the cooking liquid.

In a large pot, heat the olive oil and vegetable oil over medium heat. Add the chopped onions and sauté until softened, about 8-10 minutes.

Add the minced garlic and sauté for 1 minute until fragrant.

Add the cooked octopus pieces to the pot. Stir in the grated tomatoes, tomato paste, red wine, white malt vinegar, cinnamon stick, cloves, bay leaf, and sugar.

Pour in the reserved octopus cooking liquid (or water). Bring to a boil, then reduce the heat to a simmer.

Cover the pot and simmer for about 1 hour, or until the sauce has thickened and the octopus has absorbed the flavors. Stir occasionally.
