Shorbat Adas is a beloved, hearty lentil soup that is a staple in Saudi Arabian cuisine, especially during cooler months and Ramadan. This comforting soup is made with red lentils, vegetables, and aromatic spices, often blended to a smooth consistency and served with a squeeze of lemon.

- 1 large Yellow onion(finely chopped)
- 2 medium Carrots(chopped)
- 2 stalks Celery stalks(chopped)
- 3 cloves Garlic(minced)
- 1.5 tsp Cumin powder
- 1 tsp Coriander powder
- 0.5 tsp Turmeric powder
- 8 cups Vegetable broth
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 1 whole Lemon(for serving)

Sauté vegetables: Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until softened, about 6-7 minutes.
