- 400 g Tomatoes(canned crushed or fresh pureed)
- 2 tbsp Tomato paste
- 150 g Peanut butter(smooth or crunchy)
- 750 ml Vegetable broth
- 2 medium Carrots(peeled and diced)
- 2 medium Potatoes(peeled and diced)
- 1 medium Zucchini(diced)
- 200 g Okra(fresh or frozen, trimmed)
- 1 tsp Cumin
- 1 tsp Coriander
- 0.5 tsp Turmeric
- 0.5 tsp Chili powder(or to taste)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 0.25 cup Fresh cilantro(chopped, for garnish)
