Ugandan Pumpkin and Lentil Stew
A comforting and nutritious vegetarian stew featuring the sweetness of pumpkin balanced with earthy lentils and aromatic spices. This dish is a wholesome meal, perfect for a chilly evening.

- 500 g Pumpkin(peeled, deseeded, and cubed)
- 1 cup Red lentils(rinsed)
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 1 tablespoon Ginger(freshly grated)
- 2 medium Tomatoes(chopped)
- 4 cups Vegetable broth
- 1 teaspoon Cumin
- 0.5 teaspoon Turmeric
- 0.5 teaspoon Coriander(ground)
- 0.25 teaspoon Cinnamon
- 2 tablespoons Cooking oil
- 1 teaspoon Salt(or to taste)
- 0.5 teaspoon Black pepper(freshly ground)

Heat the cooking oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
