Greens with Peanut Butter Sauce
A nutritious and flavorful vegetarian dish featuring leafy greens cooked in a creamy, savory peanut butter sauce. This dish is a staple in Zimbabwean cuisine, often served with sadza.

ð§ ææ
- 1 large bunch Leafy Greens(e.g., collard greens, kale, spinach, or covo (African kale))
- 1 tbsp Cooking Oil
- 1 small Onion(finely chopped)
- 2 medium Tomatoes(chopped)
- 3 tbsp Peanut Butter(unsweetened, smooth)
- 0.25 cup Water(or as needed)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black Pepper(or to taste)
- 0.25 tsp Chili Flakes(optional, for heat)

- 1
Wash the leafy greens thoroughly. Remove tough stems and ribs. Roll the leaves tightly and slice them into thin strips (chiffonade).
ð¡ ããã®ã³ã: Cutting the greens thinly helps them cook evenly and become tender. - 2
Heat the cooking oil in a medium-sized pot or skillet over medium heat. Add the chopped onion and sauté until softened and translucent, about 2-3 minutes.
- 3
Add the chopped tomatoes and cook for another 2-3 minutes until they start to break down.
- 4
Add the sliced leafy greens to the pot. Season with salt, pepper, and chili flakes (if using). Stir well to combine with the onion and tomato mixture.
ð¡ ããã®ã³ã: Don't overcook the greens at this stage; they will simmer further. - 5
In a small bowl, whisk together the peanut butter and water until smooth. Add this mixture to the pot with the greens.
ð¡ ããã®ã³ã: Adjust the amount of water to achieve your desired sauce consistency. - 6
Stir everything together until the peanut butter sauce coats the greens. Reduce the heat to low, cover the pot, and let it simmer for about 10-15 minutes, allowing the flavors to meld and the greens to become tender.
- 7
Taste and adjust seasoning if needed. Serve hot, traditionally with sadza.
