  • 1 green Plantain(peeled and cut into 2-inch pieces)
  • 1 large Onion(quartered)
  • 4 cloves Garlic(smashed)
  • 1 bunch Cilantro(tied with kitchen twine)

  • For the Arroz de Coco:
  • 2 cups Rice(long-grain white rice, rinsed)
  • 400 ml Coconut milk(full fat)
  • 200 ml Water
  • 1 tsp Salt
