- 500 g White fish fillets(such as cod, sea bass, or hake, cut into chunks)
- 3 tbsp Olive oil
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 2 medium Carrots(diced)
- 2 medium Celery stalks(diced)
- 400 g Diced tomatoes(canned)
- 1 liter Fish stock or vegetable stock
- 100 ml White wine(dry)
- 1 Bay leaf
- 2 tbsp Fresh parsley(chopped)
- 1 tbsp Fresh dill(chopped)
- to taste Salt
- to taste Black pepper
- for serving Lemon wedges

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
