  • 2 medium Eggplant(cubed)
  • 2 medium Zucchini(cubed)
  • 2 medium Bell peppers(mixed colors, chopped)
  • 2 medium Onions(chopped)
  • 4 medium Tomatoes(chopped)
  • 4 cloves Garlic(minced)
  • 0.5 bunch Fresh cilantro(chopped)
  • 0.5 bunch Fresh parsley(chopped)
  • 0.25 bunch Fresh dill(chopped)
  • 4 tbsp Vegetable oil
  • 2 tbsp Tomato paste
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(or to taste)
  • 0.25 tsp Red pepper flakes(optional)

    Salt the cubed eggplant and let it sit for about 20 minutes to draw out excess moisture. Rinse and pat dry.
