  • 250 g All-purpose flour
  • 2.5 tsp Baking powder
  • 0.5 tsp Salt
  • 200 g Granulated sugar
  • 85 g Butter(melted)
  • 28 g Olive oil(or vegetable oil)
  • 2 room temperature Large eggs
  • 1 tsp Vanilla extract
  • 180 g Milk(room temperature)
  • 4 medium Apples(peeled, cored, and sliced (Granny Smith or Gala recommended))
  • 0.5 tbsp Lemon juice
  • 1 tsp Ground cinnamon(for topping)
  • 2 tbsp Granulated sugar(for topping)
  • Powdered sugar(for dusting (optional))

    Preheat oven to 180°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.

    In a medium bowl, toss the sliced apples with lemon juice to prevent browning.

    In a large bowl, whisk together the melted butter, olive oil, granulated sugar, eggs, and vanilla extract until well combined.

    In a separate small bowl, whisk together the flour, baking powder, and salt. Add this dry mixture to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.

    Pour half of the cake batter into the prepared pan. Arrange half of the apple slices over the batter, fitting them snugly. Spoon the remaining batter over the apples, then top with the remaining apple slices.

    In a small bowl, mix the cinnamon and 2 tablespoons of granulated sugar for the topping. Sprinkle this mixture generously over the apples.

    Bake for 55-60 minutes, or until a wooden skewer inserted into the center comes out clean.
