Arroz con Mariscos
A flavorful Puerto Rican-style seafood rice, similar to a less complicated version of Spanish paella. It's a one-pot meal brimming with various types of seafood, aromatic vegetables, and seasoned rice.

- 3 tbsp Olive oil
- 1/4 cup Sofrito
- 1 medium Onion(finely chopped)
- 1 medium Red bell pepper(chopped)
- 4 cloves Garlic(minced)
- 1 packet Sazón seasoning with achiote
- 1 tsp Adobo seasoning
- 2 tbsp Tomato paste
- 2 cups Short-grain rice
- 4 cups Seafood broth or fish stock
- 1/2 lb Shrimp(peeled and deveined)
- 1/2 lb Scallops(sea scallops, halved if large)
- 1/2 lb Mussels(cleaned)
- 1/2 lb Clams(cleaned)
- 1/4 cup Cilantro(chopped, for garnish)

Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add the chopped onion and bell pepper and sauté until softened, about 5-7 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant. Add the sofrito, Sazón seasoning, Adobo seasoning, and tomato paste. Cook for another 2 minutes, stirring constantly.

Add the short-grain rice to the skillet and stir to coat the grains with the sofrito mixture. Cook for 1-2 minutes, stirring, until the rice is lightly toasted.

Pour in the seafood broth or fish stock. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until most of the liquid has been absorbed.

Arrange the shrimp, scallops, mussels, and clams on top of the rice. Cover the skillet and continue to cook for another 8-10 minutes, or until the seafood is cooked through and the mussels and clams have opened.

Remove from heat and let stand, covered, for 5 minutes. Discard any mussels or clams that did not open. Garnish with fresh cilantro and serve with lime wedges.
