Arroz con Piquillo

- 300 g Arborio rice
- 200 g Roasted piquillo peppers(chopped)
- 750 ml Chicken broth
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 2 tbsp Olive oil
- 100 ml White wine(dry (optional))
- 50 g Parmesan cheese(grated)
- 2 tbsp Fresh parsley(chopped)

Heat olive oil in a large pan or pot over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
