- 2 cups White rice(rinsed)
- 1.5 cups Cooked black or red beans(canned or home-cooked)
- 3 tbsp Vegetable oil
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 cup Diced tomatoes
- 1/2 cup Diced bell pepper(any color)
- 4 cups Water or vegetable broth
- to taste Salt
- 1/2 tsp Black pepper
- 1 tsp Paprika
- 2 tbsp Fresh parsley or cilantro(chopped, for garnish)

In a medium pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
