Ashlyan-Fu
Ashlyan-Fu is a cold, spicy noodle soup that is a popular dish in Kyrgyzstan, particularly among the Dungan people. It features a flavorful broth, chewy noodles, and a variety of toppings.

- 200 g Starch noodles (like potato starch noodles or mung bean noodles)
- 200 g Beef or lamb, thinly sliced
- 1 medium Onion, thinly sliced
- 3 cloves Garlic, minced
- 1 medium Bell pepper (any color), thinly sliced
- 2 tbsp Tomato paste
- 3 tbsp Soy sauce
- 2 tbsp Vinegar (rice vinegar or white vinegar)
- 1-2 tbsp Chili oil or hot sauce(to taste)
- 1.5 l Water or beef broth
- to taste Salt

- a handful Fresh cilantro or dill, chopped (for garnish)

Cook the starch noodles according to package directions. Rinse under cold water and set aside.

In a large pot, heat a little oil and sauté the sliced onion until softened. Add the thinly sliced meat and cook until browned.

Add minced garlic, sliced bell pepper, and tomato paste to the pot. Cook for another 2-3 minutes until fragrant.

Pour in the water or beef broth. Bring to a boil, then reduce heat and simmer for about 10 minutes to allow flavors to meld.
